Add the average order value and the material share, and break-even appears here.
What is the operating-hour cost?
It is what opening your restaurant for one hour costs you, before you sell anything. Add up the month's fixed costs, then divide them by the hours you open in the month.
Fixed costs do not change with the number of orders: rent, salaries, bills and subscriptions. Materials change with every order, so you enter them in the calculator as a share of the price.
How to judge a slow hour
Take a slow hour's sales before VAT and subtract the material cost. If what is left is below the hour cost, that hour does not cover its share of fixed costs.
Closing early does not solve that on its own. Rent does not shrink when you close early, and the same costs spread over fewer hours. So compare what closing saves, such as electricity, with what that hour's sales leave you.
If you are planning to open
Put in the numbers you expect before you sign the lease. You will see how many orders an hour cover your costs, and whether you expect that many at the site you chose.
Questions about the calculator
What is the difference between fixed costs and material costs?
Fixed costs are what you pay every month, whether you sell or not: rent, salaries and bills. Material costs grow with every order, such as ingredients and packaging. That is why the calculator takes materials as a share of the price, not a monthly amount.
Do my costs go down if I close early?
Rent does not shrink when you close early, and monthly salaries usually do not either. Closing saves only what those hours use, such as electricity. The same costs spread over fewer hours, so the cost per hour goes up.
Why does the calculator round the daily orders up?
Because you cannot sell part of an order. If you need 43.3 orders a day, 43 are not enough, and you need 44. Orders an hour are an average across the whole day, so they keep a decimal.
Does the calculator save my numbers?
No. The sums run in your browser, and we do not save your numbers or send them anywhere.
See which hours are slow
In FekirTech POS, the dashboard's home page shows sales by hour, for a day, a week or a month. The profit and loss page shows each branch's profit for each month, after cost of sales, expenses and approved payroll.
Pick a single day, take the material cost and VAT off each hour's sales, and compare what is left with the hour cost you worked out here.
